A variation of Beverly Holland's pancakes

I got the recipe from Beverly who now lives down in Port Arthur. She made these once for Breakfast when we visited and we have loved them since than ( including my picky eaters). You can eat them not only with Syrup but also with german hazelnut creme (Nutella), Yam, Cream cheese with chives and many other things. :-) There is something for everybody and so I think this is not just a great Breakfast, but also a nice quick and easy Dinner with a salad on the side. :-)



4 eggs beaten
add 2/3 cup of Low fat or no fat Cottage Cheese
add 1.5 cup of low fat or no fat Sour Creme
add 1 cup of Whole Wheat (or white Wheat )flour
1 tsp baking soda
1 tsp salt and mix again.

Makes about 16 pancakes on a hot griddle or pan. If you want to go super healthy you can just do Whole Wheat flour and the cheese and the sour creme in no fat. If you want something in between go for it. This recipe is really very flexible and they always come out fine! :-)
